WHere is a simplified take on a drink featured on the seasonal drinks list. This is a party-sized prepared mix which is packed full of tastes of the festive period, making it perfect for a celebration. Save the extra citrus syrup to use in brunch beverages, desserts, or to make more rounds of bikinis.
Bikini Recipe
Serves 10 servings
For the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Premix (yields 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Syrup: Combine every items into a pot, heat until it reaches a gentle boil, stirring to dissolve. After that, take off the stove and let it to reach room temperature completely. Transfer into a sterilised bottle, close it and store chilled, it can be stored for around one month.
To make Cocktail Base: Mix all the liquid ingredients into one large bottle, let it rest for one hour, then filter it , ideally through muslin, making it perfectly clear.
To serve: Add 85ml of your cocktail base into your mixing glass packed with ice, and agitate gently for a minute to chill. Strain to a cold coupe glass or a similar vessel, garnish with the cranberries and finish by giving it a light spray with the mandarin essence above the glass.
